Food prep, eating six meals a day and trying to fill your macros isn't cheap! If you're like me most of your money goes on food! You get into a certain routine with eating. It can be cheaper & more convenient to prep with frozen bulk meat - because food is just fuel right? But I recently got sent some meat from leanmeatldn and OH MY the quality of meat was so good and lean i couldn't wait to get cooking with it. Also you can't beat meat that is sourced within your own country. 👊 Spicy Thai food is my absolute favourite, anything with chillies really. The extra lean beef chunks from leanmeatldn inspired me to create a chilli & ginger beef stir fry.
Recipe below guys hope you enjoy!
For the beef marinade
250g of lean beef chunks
1/2 thumb fresh ginger
1 clove garlic
30ml Soy sauce
1 tsp Agave
For the stir fry
1 large chilli chopped
1 pack of ready to cook rice noodles - i used barenaked noodles
1 stick of lemon grass, trimmed & sliced
1 tsp of coconut oil
50g of sugar snap peas
50g of broccoli
1 garlic clove chopped
3 spring onions trimmed and sliced
handful of roasted peanuts
thumb of ginger
handful of fresh coriander chopped
Rub the ginger and garlic all over the exposed meat and set aside
In a bowl mix together the soy sauce, chilli and agave until the agave iscompletely dissolved.
put the beef chunks in a bag and pour over the soy mixture, tie and allow to marinate for at least an hour
In a bowl mix the thinly chopped chilli with garlic, ginger and lemon grass.
In a pan add the coconut oil and allow the pan to heat up. Then add the chilli, garlic, ginger and lemon grass mixture and fry for 1 minute.
Remove your beef chunks from the marinade and add to the pan to brown.
Once brown add your broccoli, half of the spring onions and sugar snap peas. Fry for a further minute then add your noodles.
Take it off the heat, add the lime juice, and top with fresh coriander and roasted peanuts.
